Ok, so why on earth am I sharing vegan ice-cream with you at this time of year?
Well, it’s because I only discovered it a few weeks ago, so I just have to share it now, I couldn’t wait for the summer!
I absolutely love ice-cream, especially soft serve. I don’t care if it is -30* I will still eat ice-cream. Any time of the day, or temperature I am always up for some ice-cream, but unfortunately dairy does not agree with me! So, when I found this recipe on Youtube, with my own tweaks I felt like it was a gift from Heaven!!!
I have been dabbling in the vegan life-style for a while now. I was a vegetarian about 20 years ago before I had children. These days, I will only do a couple of days a week vegan, and I always feel so great on those days. I have so much more energy…
But to be honest I’m not ready to give up steak quite yet!
This is so super easy and the base is only 3 ingredients, but I like to add peanut butter or fruit topping!
I love fresh avocados, but can’t get them this time of year, so you can find this awesome bag in your frozen food aisle! (defrost them first! the avocado makes it creamy! (oh, and I forgot to say, if you don’t like avocado…that is fine because you can’t even taste it! strange, but true!!!)
Put all the ingredients in the food processor. For about 30 seconds.
Then turn off and push the bananas down. Make sure you cut frozen banana in pieces first. And keep mixing until it is smooth…about 2 minutes.
It has the consistency of soft-served ice-cream!
I now always have frozen bananas in my freezer because I make this at least twice a week!
- 1 avocado
- 1 frozen banana
- 1 tablespoon organic baking cocoa
- 1 tablespoon of organic peanut butter (this is optional)
- 1 tsp vanilla
- ¼ water
- In a high end blender or a food processor add water, avocado, frozen banana, baking cocoa, peanut butter and blend...
- stop and pulse it. The banana will need to be pushed down perhaps!
